Meatballs Bread Stick

INGREDIENTS

2 large eggs
2 tbsp. grated Romano or Parmesan cheese
2 clove garlic
kosher salt
Pepper
½ c. fresh flat-leaf parsley
1½ c. leftover stuffing
1½ lb. ground beef
4 hero rolls
4 oz. mozzarella
1 c. marinara sauce
DIRECTIONS

Heat broiler. In a large bowl, whisk together the eggs, Romano, garlic, 1/4 teaspoon salt and 1/2 teaspoon pepper. Stir in the parsley. Add the stuffing and mix to combine.
Add the beef and mix just until incorporated. Form the mixture into 12 meatballs (about 3 inches each) and place on the prepared baking sheet. Broil until cooked through, 8 to 10 minutes.
Line a second broiler-proof baking sheet with foil. Place the rolls on the prepared sheet. Top one half with the meatballs, sauce and cheese. Broil until the cheese melts and the bread is golden brown, 1 to 2 minutes.

Tips & Techniques
Use Up the Marinara Sauce: For an easy Italian breakfast, in a small skillet, sauté crushed red pepper flakes and garlic until golden. Add 1 cup marinara and heat through. Using a spoon, make two small wells in the sauce; crack an egg into each. Season, cover and cook to desired doneness. Drizzle with olive oil and serve with crusty bread.
